Abstract

The colour is one of the yolk quality parameter. The consumers require darker yolks. The yolk colour depends on the presence of carotenoids in the diet. The pigmenting efficiency of carotenoids depends on many factors such as their colour hue or digestibility, metabolism or deposition in a tissue. In mixed feed for hens, various synthetic carotenoids, such as ethyl ester of p-apo-8′-carotenoic acid and canthaxanthin known as Carophyll Yellow and Carophyll Red, are used for colouring of egg yolk. But canthaxanthin is considered as one of the potentially hazardous substances for human health. Therefore, natural alternatives are searched. A suitable alternative seem to be carrot, alga Chlorella or marigold which increase the concentration of health-promoting carotenoids in yolks and increase the quality of eggs.
