Abstract

The analysis of carcass bodies were carried out in the groups of bulls of Aberdeen Angus (AA) and Hereford (HE) (smaller body framework), charolais (CH) and Beef Simmental (BS) (high body framework). The groups CH and BS presented the higher intensity ofgrowth rate. The highest slaughter yield was in CH and AA. By the SEUROP classification the bulls CH and BS were the best in meatiness and the groups AA and HE had the highest fattiness.
