Abstract

Free-range systems of hens are economically more demanding than the cages commonly used in the Czech Republic. Hens here have a higher feed consumption and lower egg production. But this is offset by the profit of a quality product – an egg with properties of functional food. Pasture vegetation is rich in antioxidants, which are carotenoids and vitamins, and is also a source of unsaturated fatty acids which are important for human health. These substances are stored in eggs, especially in egg yolk, and improve the quality of eggs and prolong their shelf life.
