Abstract

Quantity and quality of milk fat have a substantial importance both for breeders of dairy cows and also for consumers of milk and milk products. There is possible to influence both quantity and quality of milk fat by an effect of feeding technique, and also by contents of different nutrients in diets. However, not only organoleptic characteristics can be affected but also proportional presence of single fatty acids can be influenced in these ways. Effects of content and structure of fiber and activities of saccharides, fats and oleaginous seeds are emphasized. Several practical methods how to influence content of milk fat by feeding corrections are mentioned.
