Abstract

The aim of the study was to extend our current knowledge by obtaining novel information regarding the effect of dehulled white lupine seeds (DWL) on the growth performance and chemical, physical and sensory properties of rabbit meat. The study compared fattening diet containing DWL (V-OLB diet) and fattening diet based on soybean meal (V-SES diet). Feeding the V-OLB diet decreased Warner-Bratzler shear force (P = 0.003) of grilled Longissimus lumborum muscle. This finding was confirmed during the sensory analysis, higher tenderness (P = 0.012) and fibrosity (P = 0.003) was detected in meat of rabbits fed the V-OLB diet. Feeding the V-OLB diet reflected also in reduced saturation (P = 0.001) and thrombogenic (P = 0.001) indexes from rabbit hind leg meat. There was a better feed conversion ratio (P = 0.001) in rabbits fed the V-OLB diet.
