Classification of pig and bovine carcasses


Pig and adult bovine carcasses are classified in accordance with the EU and national legislation using the so called SEUROP system. Training and examination of prospective classifiers is organised by the Ministry of Agriculture of the Czech Republic through the Institute of Animal Science. A one-day theoretical training takes place in the Institute of Animal Science and a two-day practical training takes place in an abattoir. The following final examinations are supervised by representatives of the classification inspection (State Veterinary Administration) and the Ministry of Agriculture.

The Institute of Animal Science also organizes follow-up courses for active classifiers. The participation in at least two follow-up courses is required for the extension of the validity of the license.
