Abstract

In the Czech Republic potatoes do not lose their importance as food and raw materials. To provide the necessary amount of production for own consumption cannot do without the relatively high imports of potatoes and their products. This is true despite the fact that our productions conditions allow at least ensure self-sufficiency in the production of potatoes. However, current economic possibilities of our agriculture tend to support other crops (canola, corn, wheat, barley), which are guaranteed by the relatively low cost of production, do not require much labor and are still cost-effective. Therefore relatively important portion of potato production in the Czech Republic is provided by small farmers. This publication summarizes use and economic production of potatoes. Individual chapters describe the history and global development of potato growing, breeding, technologies and techniques, harvesting and post-harvest processing, storage and market adjustments, economics of sales and selling potatoes.
