Abstract

Nutrition of fattening pigs targets the meeds of animals in term of nutrients intake for optimal growth and carcass value traits. The interest in meat quality has increased in recent years. The meat quality is influenced by many factors, e.g. nutrition, genetic factors, age of animal, environmental factors, transport to slaughter, conditions before slaughter and processing after slaughter. Some treatments affecting nutrient composition in meat can reduce negative effect of genetic predisposition or handling before slaughter.
