Abstract

The methodology is focused on analyzing the relationship between cleaness of animals, breeding environment and quality of sheep’s milk, including the determination of the principles of good practice in assessing the cleannes of the sheep´s body. Attention is also given to the risk points in the breeding environment which directly affect the purity of the sheep’s body surface. The methodology describes the selection of proper milking routine by the level of purity of the sheep’s body cover, in order to maintain the health and biological value of raw ewe’s milk and dairy products.
