Abstract

Fatty acid composition was compared in selected animal products, i. e. pork loin, milk and egg yolk. Significantly (P ≤ 0.001) the highest content of monitored fatty acids and fat was found in yolk (6 798.6 mg/100 g, 32.22%) in comparison with milk (1 343.6 mg/100 g, 4.55%) and pork meat (716.4 mg/100g, 2.29%). In terms of nutrition and human health, the most favourable ratio of n-6 and n-3 polyunsaturated fatty acids (P ≤ 0.001) was recorded in milk (5.14) compared to yolk (12.05) and loin (12.47).
