Abstract

Algae are sources of important nutrients, mainly vitamins, unsaturated fatty acids and carotenoids. In poultry algae can replace synthetic carotenoids which are used as means of pigmentation of yolks and skin. Carotenoids of algae increase oxidative stability of yolk lipids.
