Abstract

The supplement of lineseed oil with a high content of alpha linolenic acid increases the content of polyene fatty acids n-3 (PUFA n-3) in animal products. However, the lineseed oil is very susceptible to oxidation, thus making limitative its using for production of fortified or functional food. The contribution of this methodology consists in recommended antioxidant protection of unsaturated fatty acids by addition of rape oil, the source of organic selenium and vitamin E. This methodology provides several instructions for PUFA n-3 eggs production.
