Effect of organic acids on growth of chilled chicken skin microflora

Abstrakt | This study was designed to evaluate the effect of citric acid, lactic acid and potassium sorbate of chilled chicken skin microflora. Microbial reduction after application of organic acids was significant in case of 10% citric acid and 2% lactic acid. The most effective was combination of 2% lactic acid with 0.2% potassium sorbate. Sensory analysis found that application of 10% citric acid was not acceptable. However, chickens treated with the mixture showed better organoleptic properties than the control. |
