The influence of diet on carcass composition and meat quality attributes in cervids
The objective of the study was to compare the effect of different diets on growth performance; carcass composition and meat quality of farmed fallow deer. The animals from the pasture group compared to those supplemented with barley had a lower average slaughter and live weight gain; as well as the dressing percentage. On the contrary; the proportion of internal fats in the pasture group was approximately half than that recorded in remaining groups and this group tended to have the lowest proportion of meat in carcass. They had the lowest proportion of carcass fat and the highest proportion of bones. There were no differences among groups in individual fatty acids.
