Abstract

On August 4-9, 2019, the 65th annual conference of the American Meat Science Association (AMSA) was held in Potsdam, Brandenburg, Germany, with the central motto „Meat for Diversifying Markets“, which can be translated as Meat. for diversified markets. The conference focused on the challenges related to the future development of meat and meat production in today’s increasingly globalized world. It can be said that this event represents the largest scientific event related to research on meat production, meat processing or its importance in human nutrition every year. The conference was divided into 13 thematic sections focusing on consumer behavior and ethics, quality and safety, meat processing and use of meat substitutes, animal production, emerging technologies, muscle biology and metabolism, human nutrition and sustainability.
