Abstract

The aim of this study was to evaluate the effect of storage time, housing system and phase of laying cycle of hens on penetration of microorganisms. After longer storage, eggs were penetrated mainly E. coli and total count of microorganisms, more penetrated microorganisms were detected in eggs laid at the end of laying cycle. Eggs laid in cages had more contaminated albumen than shell membranes, whereas eggs laid on litter system had more contaminated shell membranes.
