Abstract

Three hundred thirteen Czech Fleckvieh cows were investigated for CSN2 (beta- casein) and CSN3 (kappa-casein) genotypes using the PCR-RFLP method, milk quality parameters, and coagulation properties. The objective of this study was to determine compositeeffects of CSN2 and CSN3 haplotypes on the parameters of quality and coagulation of milk in Czech Fleckvieh cows. A significant effect of genes was found on true protein content, casein content, casein number, coagulation time, curd quality, and curd firmness. A positive impact of haplotypes A1A1BB, A1A1AB and A1BAA was found on most of the observed parameters. Haplotypes A1A2BB and A1A2AB were connected with good coagulation properties but low milk production. Haplotypes containing the CSN3 allele E (A1A1BE, A1A2AE, A1A1AE and A1BAE) had a negative effect on most of the parameters observed.
