Abstract | The additives are biological and chemical (after effective matter). Some biological contain only Lactic acid bacteria (LAB) and some biological contain LAB and enzymes. The chemical preparation are composed from organic acids or their salts. The knowledge of structure preparation is important for choice of suitable additive. |
