Abstract

The carcasses graded in the Czech Republic in years 2005 to 2011 (totally 17.8 million carcasses) were analyzed. In this period were slaughtered 23.8 million pigs, and 75 % of them were graded according of EC-standards. In 2005 were only 54.4 % carcasses graded according to the SEUROP system. During this seven-years period, this proportion increased to 84.2 % in 2011. The average lean meat content and average carcass weight have both slowly increased. The lean meat content from 55.65 % in year 2005 to 56.46% in year 2011 and the carcass weight from 86.91 kg to 88.24 kg.
