Abstract

Game animals have been used all over the world as a source of livelihood, for sport and recreational hunting since a long time ago. Global demand for meat is still growing, and the potential for the use of game meat thus plays an important role in ensuring food security in some countries. In addition, venison is lean, tasty, and rich in proteins, minerals and vitamins, with low content of intramuscular fat. Consumers are typically exposed to venison derived from wild-hunted or farm-raised game species. Farm breeding can ensure a regular supply of standardized-quality meat to the market, where the game meat is often available only during the certain parts of the year. On the contrary, wild game meat is more accessible and cheaper for many consumers, but may be associated with more ethical and health issues.
