Abstract

The aim of the study was determine the effect of microbiological air contamination on quality of goat milk Microbiological air contamination was assessed in the building for housing 390 goats at monthly intervals by the sedimentation technique during 3 macroclimatic season of the year (the transitional period -PO, mild summer ML, hot summer HL). Selection agar and establishing the total bacteria count – CPM, coliform bacteria – CB, psychrophilic bacteria – PB, yeasts and fungi followed the valid Czech standards. At the same time in bulk samples of goat milk were collected for the determination of selected microbiological parameters (total bacteria count – TBC, coliform bacteria -CB, somatic cells count – SCC). The experimental data were analyzed in the programme Statistica. Based on the evaluation results of microbiological analyses of air and milk it is possible to say that was established negative correlation between the number of psychrophilic bacteria in stable air and the total bacteria count and the number of coliform bacteria in goat milk
