Abstract

The study assessed the effect of pasture fattening on the meat quality of chickens with different growth intensities and evaluated the possibility of increasing the intake of pasture vegetation by chickens in the form of a reduction in feed ration. Medium or slow-growing chickens are more suitable for fattening in outdoor enclosures with the possibility of grazing due to higher physical activity and slower growth, thus ensuring a sufficiently long stay on the pasture, which is a guarantee of a higher intake of pasture vegetation. Chickens with a lower intensity of growth are characterized by firmer and more mature meat with distinctive taste characteristics. Consumption of pasture vegetation by chickens favorably affects meat quality by increasing the content of antioxidants (vitamins and carotenoids) and n3 polyunsaturated fatty acids with potential benefits for human health. In order to ensure a higher intake of pasture herbage by chickens, it is advisable to restrict the cereal mixed feed. However, this measure must be carried out sparingly (reduction the ad libitum dose by 20%) so that it does not lead to a significant decrease in performance.
