Abstract

The aim of the study was to evaluate the effect of different protein sources in the feed ration on the meat quality of Czech Fleckvieh bulls Two different protein sources – white lupine (Lupinus albus) and extracted meal from rapeseed (Brassica napus) – were compared in this study with the control diet containing a commercial urea supplement. The effect of diet on the meat quality of two muscles (longissimus lumborum and rectus abdominis) from Fleckvieh bulls kept under identical management conditions and slaughtered in a similar age was investigated. Protein sources had no effect on chemical composition and physical characteristics of meat, except for instrumentally measured tenderness of the rectus abdominis muscle which was significantly higher in the lupine fed group. Marked differences were identified using a descriptive sensory analysis. Both muscles from the bulls fed lupine were scored as most tender and most easily chewed and one of the muscles analysed from this group was most juicy. On the contrary, the lowest beef odour and beef flavour intensities but the highest off-flavour intensity were recorded in the bulls fed lupine. It is concluded that both lupine grain and rapeseed extracted meal may be used in diets for fattened bulls without any negative effects on chemical composition and physical characteristics of meat. However, including lupine in the diet may positively influence meat texture.
